This weekend morning, I created a super simple brunch featuring Baek Jong-won’s signature scrambled eggs, served with juicy sausages, a fresh salad, warm bread, and a comforting cup of coffee. The combination is absolutely delightful, especially with a warm beverage. It’s the perfect way to gently awaken your body on a lazy weekend morning, making the start of your day feel special and invigorating.
Ingredients- 2 large eggs
- 1/4 cup milk
- 3 pinches of salt
- 2 pinches of black pepper
- 1/2 Tbsp olive oil
- 1/2 Tbsp butter
Cooking Instructions
Step 1
Begin by cracking 2 large eggs into a bowl. Pour in 1/4 cup of milk. Add 3 pinches of salt and 2 pinches of black pepper. Whisk everything together thoroughly with a fork or whisk until well combined. Aim for a smooth mixture without excessive bubbles.
Step 2
Heat a non-stick skillet over medium-low heat. Add 1/2 tablespoon of olive oil, followed by 1/2 tablespoon of butter. Allow the butter to melt completely and become fragrant. Once the butter is melted, pour the egg mixture evenly into the pan. Wait for about 10-20 seconds, or until the edges of the eggs just begin to set.
Step 3
As the eggs start to cook and form curds, gently stir and fold them with a spatula or wooden spoon, moving from the edges towards the center. Keep the heat on low throughout this process to ensure the eggs cook gently and remain creamy. Baek Jong-won’s method often involves cooking the eggs until they are just set but still moist. I personally prefer them a bit more cooked, so feel free to adjust the cooking time to your preference. For a classic soft scramble, remove from heat while still slightly wet.

Prepare your frankfurter sausages by making diagonal cuts across them. Heat another pan or use the same one (after wiping it clean if necessary) over medium heat. Place the sausages in the pan and cook until they are golden brown and slightly crisp on all sides, allowing the juices to render beautifully.

Your delicious homemade brunch is ready! Arrange the soft, creamy scrambled eggs on a plate. Add the perfectly browned sausages, a side of fresh salad, and some warm bread.
