Snowball Cookies
Delicate Snowball Cookies, Like Falling Snow
After a previous attempt that went awry due to confusing baking soda with another ingredient, I’m excited to share my successfully recreated Snowball Cookie recipe! These melt-in-your-mouth delights are perfect for sharing with family.
Main Ingredients
- 100g unsalted butter, softened to room temperature
- 27g powdered sugar (for cookie dough)
- 135g cake flour
- 40g cornstarch
- 1g salt
Cooking Instructions
Step 1
In a large bowl, place the softened butter (100g) and use a rubber spatula to gently beat it until it reaches a creamy consistency. Ensure the butter is at room temperature – not too cold and not melted.
Step 2
Once the butter is creamy, sift in the powdered sugar (27g). Mix gently with the spatula, being careful not to incorporate too much air, until just combined with the butter. Over-mixing at this stage can lead to a tougher cookie.
Step 3
Sift the dry ingredients together: cake flour (135g), cornstarch (40g), and salt (1g) directly into the butter-sugar mixture. Sifting prevents lumps and ensures a finer texture. Using the spatula or a bench scraper, gently fold and cut the ingredients together until a cohesive dough forms. Avoid over-kneading, as this can make the cookies tough.
Step 4
Shape the dough into a rectangular block on your work surface. Wrap it tightly in plastic wrap or place it in a container and refrigerate for about 40 minutes, or until firm enough to handle easily.
Step 5
Remove the chilled dough from the refrigerator. Using a chopstick, knife, or bench scraper, cut the rectangular dough into your desired cookie shapes (often small squares or rectangles before rolling). If your cutting board is small, you may need to cut the dough in batches or press it down to fit.
Step 6
Gently roll each cut piece of dough between your palms to form small balls. Place the balls onto a baking sheet lined with parchment paper, ensuring there is ample space between each cookie as they will spread slightly during baking.
Step 7
Bake in a preheated oven at 160°C (320°F) for approximately 10 minutes. To check for doneness, carefully break one cookie in half; if the inside is cooked through, they are ready. Remove from the oven and let them cool completely.
Step 8
Once the cookies have completely cooled, you can optionally roll them in the remaining powdered sugar (70g) for a beautiful, snow-like finish. This adds extra sweetness and a delightful appearance.
