Ingredients- Sweet pumpkin (prepared) 280g
- Water 280g
- Sugar 1 Tbsp
- Salt a pinch
- Glutinous rice flour 1.5 Tbsp
- Water 50ml (for mixing rice flour)
Cooking Instructions
Step 1
It’s important to wash the sweet pumpkin peel thoroughly. Sprinkle a little baking soda on the sweet pumpkin, then use a soft brush or a clean scrub pad to rub all the crevices carefully. After that, rinse it under running water.
Step 2
Place the sweet pumpkin in a microwave-safe container, cover it, and microwave for 1-2 minutes. This will slightly soften the dense sweet pumpkin, making it much easier to cut.
Step 3
After microwaving, carefully cut the sweet pumpkin in half. Then, use a knife to trim off the hard stem ends on both sides.
Step 4
Use a spoon to scrape out the seeds and stringy insides of the pumpkin. Then, peel the skin thinly using a peeler or a knife.
Step 5
Cut the peeled sweet pumpkin into bite-sized cubes, about 2-3 cm. Cutting them too small might make mashing or blending difficult later.
Step 6
In a small bowl, combine 1.5 Tbsp of glutinous rice flour with 50ml of water. Whisk well with a whisk or spoon until there are no lumps. It’s crucial to pre-mix the glutinous rice flour with water; otherwise, the porridge might clump or not cook evenly.
Step 7
To achieve a smooth texture, use a blender. Add the cubed sweet pumpkin and 280g of water to the blender and blend until very smooth. Blending will result in a silky smooth porridge that’s even suitable for babies.
Step 8
Transfer the blended sweet pumpkin mixture to a pot and cook over low heat. Cooking on high heat can cause it to stick to the bottom, so it’s best to stir occasionally and cook gently over low heat.
Step 9
Once the sweet pumpkin is somewhat cooked, add 1 Tbsp of sugar and a pinch of salt to season. Gradually pour in the pre-mixed glutinous rice flour slurry while stirring continuously to prevent lumps. Continue cooking until you reach your desired consistency. The porridge should be thicker than a soup to maintain its texture.
