  • 1 packet Chapaghetti noodles
  • 1/2 medium onion
  • 2/3 tsp Gochujang (Korean chili paste)

First, wash and peel the onion, then thinly slice it into strips. Heat a little cooking oil or olive oil in a pan over medium-low heat. Add the sliced onions and stir-fry them until they turn golden brown and release a sweet aroma. This caramelization process is key to maximizing the onion’s sweetness and adding depth of flavor.

While the onions are cooking, bring a pot of plenty of water to a rolling boil over high heat. Once boiling, add the Chapaghetti noodles and cook them for about 30 seconds to 1 minute longer than the time recommended on the package. Cooking the noodles slightly al dente will help maintain a chewy texture when stir-fried with the sauce later.

While the noodles are cooking, push the sautéed onions to one side of the pan. Add the 2/3 tsp of Gochujang to the cleared space and stir-fry it for about 10-20 seconds until fragrant, being careful not to burn it. This step reduces any bitterness from the Gochujang and enhances its savory flavor. Then, add the cooked noodles and the sautéed onions and Gochujang, mixing everything gently to combine.

Once the onions and Gochujang are somewhat mixed with the noodles, add both the Chapaghetti powder soup base and the liquid soup base from the packet. Stir well until the noodles and onions are evenly coated with the sauce. If there’s too much water at this point, you can drain some of it off.

Finally, add the flavored oil (olive oil or sunflower oil) that comes with the Chapaghetti packet. Stir-fry over low heat for about 1 more minute. This step adds a glossy sheen to the noodles and infuses them with a subtle smoky flavor and a richer aroma. Gently stir-frying ensures the sauce coats the noodles well.
