No need to dine out! Introducing a simple yet impressive dish: a smoky bacon and bean sprout stir-fry that tantalizes your senses. The delightful combination of crisp bean sprouts, savory bacon, and aromatic mushrooms creates the perfect side dish for rice or a fantastic appetizer.
Key Ingredients for Stir-Fry- 300g Crisp Bean Sprouts
- 5 strips of Flavorful Bacon
- 150g King Oyster Mushrooms (or similar, for chewy texture)
- 3-4 stalks of Scallions
- 1/4 Onion
- 1 Serrano Pepper (for a hint of spice)
- 1/2 Red Bell Pepper (for color)
- 1 Tbsp Minced Garlic
- A little Cooking Oil
Flavor-Enhancing Sauce Ingredients- 1.5 Tbsp Oyster Sauce
- 2 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1 Tbsp Chili Oil (for smoky flavor)
- A pinch of Black Pepper
- 1.5 Tbsp Oyster Sauce
- 2 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1 Tbsp Chili Oil (for smoky flavor)
- A pinch of Black Pepper
Cooking Instructions
Step 1
First, wash the bean sprouts thoroughly under running water and drain them completely in a colander. Tear the king oyster mushrooms into bite-sized pieces. Briefly blanch them in boiling water, then immediately rinse in cold water and squeeze out any excess moisture. Finely chop the scallions, serrano pepper, and red bell pepper. Cut the bacon into manageable pieces. In a small bowl, combine all the sauce ingredients (oyster sauce, soy sauce, sugar, chili oil) except for the black pepper, and mix well to create the sauce.
Step 2
Now, let’s get stir-frying! Heat a pan over medium heat and cook the bacon until it’s golden brown and crispy, rendering out its fat. Remove the cooked bacon and set it aside on a plate. Using the rendered bacon fat (or add a little cooking oil if needed), sauté the minced garlic and sliced onions over medium-low heat until fragrant. Once the onions begin to turn translucent, add the blanched king oyster mushrooms and stir-fry briefly.
Step 3
After the mushrooms have cooked slightly, add the chopped scallions and peppers to the pan. Stir-fry them with the other ingredients to release their aroma.
Step 4
Now for the highlight of this dish – infusing it with that incredible smoky ‘wok hei’ flavor! Drizzle the chili oil around the edges of the pan. Turn the heat up to high and quickly stir-fry everything for a short burst, allowing the ingredients to mingle and absorb that fiery essence. It’s crucial to stir-fry intensely but briefly to capture the smoky aroma and flavor.
Step 5
Add the stir-fried bacon and the drained bean sprouts to the pan with the smoky vegetables. Pour the prepared sauce evenly over everything. Keep the heat on high and use a spatula to quickly toss and stir the ingredients together for about 3-4 times. The key is to stir-fry just enough so the bean sprouts are slightly tender but still retain their crispness; avoid overcooking them until they become soggy.
Step 6
As soon as the bean sprouts are cooked to a tender-crisp stage, turn off the heat immediately. Finish by sprinkling a pinch of black pepper and giving it a final gentle toss. Your delicious smoky bacon and bean sprout stir-fry is ready! Serve it over hot rice or enjoy it with a cold beer.
