Today, I’m sharing a smoked duck stir-fry that makes for a satisfying meal even without rice. We’re adding chewy rice cake soup pieces and sweet pumpkin, creating a dish loved by both kids and adults! The rich flavor of smoked duck combined with vegetables, rice cakes, and pumpkin makes it nutritious and incredibly filling. This dish is simple yet elegant enough to be a main course, so be sure to give it a try!

Main Ingredients

  • 1 pack Smoked Duck (approx. 600g)
  • 1 Onion
  • 2 handfuls Rice Cake Soup Slices (approx. 200g)
  • 1/4 Small Pumpkin
  • 20 cloves Whole Garlic
  • A little Green Onion
  • 1 Green Chili Pepper
  • 1 Red Chili Pepper

Cooking Instructions

Step 1

First, let’s prepare the vegetables and rice cakes. Peel the pumpkin, remove the seeds, and cut it into 2-3cm pieces. Slice the onion similarly. Thinly slice the green onion, green chili, and red chili peppers diagonally for color. Lightly smash the whole garlic cloves with the side of a knife or slice them. Rinse the rice cake soup slices lightly in cold water and drain. (Tip: Briefly microwaving the pumpkin for 2-3 minutes can shorten the cooking time.)

Now, let’s remove excess fat from the smoked duck. Heat a pan over medium heat, add the smoked duck, and cook until golden brown. Place the cooked duck on a sieve to drain any excess oil for a cleaner taste. (Alternative method: Line a steamer with chives, place the smoked duck on top, and steam for a tender result. You can also steam the pumpkin alongside the duck.)

Now, we’ll start stir-frying! Use the same pan where you cooked the duck. (If there’s too much oil, wipe some of it out.) First, add the smashed garlic and sauté over low heat until fragrant. Then, add the sliced onion and stir-fry until translucent. Once the onions are somewhat cooked, add the pumpkin and rice cake soup slices and stir-fry together.

This step is for cooking the pumpkin. If using fresh pumpkin, cover the pan with a lid and cook over medium heat, opening occasionally to stir, until the pumpkin is tender. (Tip: Microwaving the pumpkin beforehand significantly saves cooking time.)

When the pumpkin is almost cooked, add the pre-cooked smoked duck. Add the oyster sauce (or soy sauce), oligodang, and cheongju. Stir-fry everything well until the ingredients are evenly coated and combined. (Adjust seasoning to your preference.)

Once everything is cooked and the sauce has thickened slightly, turn off the heat. Finally, add the sliced green onion, green chili, and red chili peppers and gently toss to combine with residual heat. Sprinkle with sesame seeds for a nutty aroma. It’s done!
