Smoked Duck, Shrimp, and Garlic Stir-Fry: A Flavorful Delight
Clear Out Your Fridge! A Delicious Stir-Fry with Meat, Shrimp, and Garlic
I rummaged through my fridge and used leftover ingredients to create this fantastic main dish: a hearty stir-fry featuring meat, shrimp, and garlic.
Main Ingredients- 200g Smoked duck or pork jowl (Hangjeongsal)
- 12 peeled shrimp
- 5 cloves garlic
- 2 King oyster mushrooms
- 3 Tbsp cooking oil
Cooking Instructions
Step 1
These are the leftover smoked duck and pork jowl from my freezer. I’m not sure why I kept such small portions… haha. Together, they make about 200g of meat.
Step 2
I thawed about 12 frozen shrimp, meant for Gambas. After thawing, I removed the tails, washed them, and patted them dry. Ensuring the shrimp are dry helps prevent splattering oil and enhances their natural flavor.
Step 3
I prepared 2 king oyster mushrooms. I trimmed the base and sliced them into bite-sized pieces. You can slice them thickly or thinly, depending on your preference.
Step 4
I thinly sliced 5 cloves of garlic. The aroma of garlic will infuse the oil, adding wonderful depth to the dish. Slice them slightly thicker than paper-thin to prevent burning too quickly.
Step 5
First, add only the meat (smoked duck or pork jowl) to a preheated pan. Stir-fry over medium heat. Cook just until the fat renders out and the meat is lightly browned. Avoid overcooking, as it will be stir-fried again with other ingredients later.
Step 6
Transfer the browned meat to a separate dish and set aside to cool slightly. This step prevents the meat from becoming tough and ensures a balanced texture when all ingredients are combined later.
Step 7
In the same pan, add 3 tablespoons of cooking oil. Add the sliced garlic and gently stir-fry over low heat to create garlic-infused oil. Cook until the garlic is fragrant and golden brown, being careful not to burn it. This garlic oil forms the flavorful base of the dish.
Step 8
Once the garlic is nicely browned and aromatic, add the prepared shrimp. Stir-fry the shrimp along with the garlic oil, ensuring they don’t stick to the pan.
Step 9
As the shrimp turn reddish-pink, add the sliced king oyster mushrooms. Continue to stir-fry, combining the shrimp and mushrooms until the mushrooms soften slightly.
Step 10
When the shrimp are fully cooked and turn opaque, return the browned meat to the pan. Increase the heat to medium-high and stir-fry everything together quickly for about 1-2 minutes, allowing the flavors to meld.
Step 11
Push all the ingredients to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space. Let the soy sauce sizzle and caramelize slightly on the hot pan for a moment before quickly mixing it with all the ingredients. This technique adds a hint of smokiness, removes any gamey odor from the meat, and boosts the umami flavor without making the dish overly salty.
Step 12
Once all the ingredients are well combined with the soy sauce, turn off the heat. Sprinkle with sesame seeds for a final touch. Your delicious Smoked Duck, Shrimp, and Garlic Stir-Fry is ready!
