Cooking Instructions
Step 1
Start by boiling the spaghetti in plenty of water for about 6-7 minutes. It’s best to cook the pasta until it’s al dente, meaning it still has a slight bite.
Step 2
While the pasta is cooking, prepare all your ingredients. Thinly julienne the bell peppers and chili peppers. Slice the whole garlic cloves thinly. The smoked duck slices can be used as they are.
Step 3
Heat a pan over medium heat without adding any oil. Add the smoked duck slices and sliced garlic to the dry pan and sauté. The duck will release its own flavorful oil, which will help to lightly brown the garlic.
Step 4
Once the smoked duck is nicely browned and has rendered plenty of fat, check if the garlic is cooked through. Then, add all the prepared vegetables (bell peppers, chilies) except for the king oyster mushrooms and stir-fry them together. Cook until the vegetables are slightly softened but still retain some crispness.
Step 5
Drain the cooked spaghetti and add it directly to the pan. Stir-fry briefly, then add the king oyster mushrooms along with 100ml of water, olive oil, fermented shrimp paste (or sauce), minced garlic, salt, pepper, and MSG (if using). Continue to stir-fry until everything is well combined and the sauce coats the pasta evenly.
Step 6
Stir-fry for a final moment to ensure all ingredients and seasonings meld together beautifully. Your delicious Smoked Duck Pasta is now ready! Transfer to a warm serving plate and enjoy this restaurant-quality dish made right in your own kitchen.
