Easy Smoked Duck and Shiitake Mushroom Stir-fry Recipe (with Chive Salad)
Today, I’m bringing you a super simple dish. Smoked duck is tender and chewy, with a fantastic flavor! It’s moist, making it perfect for kids’ palates or as a delightful snack with drinks for adults. It’s a versatile ingredient that can be used in many dishes. Today, I’ve prepared a stir-fry that elevates flavors when combined with other ingredients.
Smoked Duck Stir-fry Ingredients- 500-600g smoked duck
- 3 shiitake mushrooms
- 10 stalks of scallions
- 2 hot chili peppers (like Thai chilies)
- 1 Tbsp minced garlic
- Pinch of whole black pepper
Chive Salad Ingredients- 100g chives
- 1/2 onion
- 1 red chili pepper
- 1 green chili pepper
Chive Salad Dressing- 30g Tentsuyu sauce (or 2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp corn syrup)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp vinegar
- 1/2 Tbsp minced garlic
- 100g chives
- 1/2 onion
- 1 red chili pepper
- 1 green chili pepper
Chive Salad Dressing- 30g Tentsuyu sauce (or 2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp corn syrup)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp vinegar

Cooking Instructions
Step 1
First, prepare the smoked duck and shiitake mushrooms. If you bought a whole smoked duck, thinly slice it into bite-sized pieces. For the shiitake mushrooms, separate the caps from the stems and thinly slice the caps. (You can use the stems for making broth or finely mince them for fried rice.)
Step 2
Separate the green and white parts of the scallions and roughly chop them. Slice the hot chili peppers thinly.
Step 3
For the chive salad, wash and thoroughly dry the chives, then cut them into about 3-4 cm lengths. Thinly slice the onion. Slice the red and green chili peppers diagonally, removing the seeds. (Tip: For the crispiest chive salad, mix the dressing with the chives right before serving. If prepared too far in advance, the vegetables can become soggy.)
Step 4
Heat a pan over medium heat and add the smoked duck. Cook until it releases its fat and starts to brown slightly. Add the minced garlic and stir-fry until fragrant. (Tip: For an extra smoky flavor, you can briefly torch the duck after it has rendered some fat.)
Step 5
Once the duck has rendered enough fat and is nicely browned, prepare to add the other ingredients. Be careful not to overcook the duck, as it can become tough.
Step 6
Add the sliced shiitake mushrooms and the white parts of the scallions to the pan with the duck fat. Stir-fry over high heat for about 1-2 minutes until the mushrooms soften. Grind some whole black pepper over the mixture as it cooks.
Step 7
When the mushrooms are sufficiently cooked, add the green parts of the scallions and the sliced chili peppers. Toss everything together quickly for about 20-30 seconds, then immediately remove from heat. Avoid overcooking to maintain the vegetables’ crispness.
Step 8
Serve the delicious smoked duck and shiitake mushroom stir-fry. The subtle smoky aroma, the deep flavor of the shiitake mushrooms, and the fragrant garlic and scallions create a wonderful combination. The occasional bite of chili pepper adds a nice spicy kick, balancing the richness. Enjoy it wrapped in pickled radish wraps or served with freshly steamed rice for a satisfying meal. Pairing it with the prepared chive salad adds a tangy and sweet dimension to the dish.
