They say duck fat is good for you, but rendering out the excess oil makes it even more delicious! I always make sure to eat plenty of vegetables with my meat. This recipe transforms smoked duck into a light and flavorful dish.

Main Ingredients

  • Smoked duck 200g
  • Carrot 1/2 medium (approx. 50g)
  • Onion 1/2 medium (approx. 60g)
  • Chives 2 handfuls (approx. 100g)
  • Cheongyang peppers 2 (adjust to your spice preference)

Seasoning

  • Soy sauce 1 Tbsp
  • Plum extract (or syrup) 1 Tbsp
  • Toasted sesame seeds 1 Tbsp

Cooking Instructions

Step 1

First, prepare the vegetables. Peel the carrot and onion, then slice them into thin julienne strips about 0.5cm thick. Wash the chives thoroughly and cut them into 3-4cm lengths. Thinly slice the Cheongyang peppers. It’s important to cut the chives into manageable pieces, as they can become mushy if overcooked.

Heat a little cooking oil in a frying pan over medium heat. Add the julienned carrots and stir-fry for about 1 minute to bring out their natural sweetness. Once the carrots start to look slightly translucent, add the sliced onions and continue to stir-fry for another 2 minutes until the onions are also translucent and softened.

When the onions are translucent, reduce the heat to low or briefly turn it off. Drizzle 1 Tbsp of soy sauce around the edges of the pan. This allows the soy sauce to caramelize slightly, enhancing its flavor. Gently toss the vegetables to ensure the sauce is evenly distributed.

Add the cut chives and sliced Cheongyang peppers to the pan. Drizzle a little more soy sauce over the chives. Turn the heat up to high and stir-fry quickly for a short time, just until the ingredients are combined and the chives are still crisp.
