Step 1
Let’s prepare all the ingredients for our delicious smoked duck and aged kimchi stir-fry. Fresh ingredients are key to great flavor.

The star of today’s dish, the smoked duck meat, is prepared in bite-sized pieces (about 200g). Using thigh meat will result in a more tender and flavorful outcome.
Step 3
Rinse the aged kimchi, which can be quite sour, lightly under running water. Then, squeeze out as much water as possible with your hands. This step helps to prevent the dish from becoming overly sour when cooked.
Step 4
Cut the prepared aged kimchi into bite-sized pieces. Slice the green onion diagonally into large pieces. Cut the whole garlic cloves in half just once, allowing them to absorb the flavors better. Chop the onion into large chunks to maintain a pleasant texture. The smoked duck is already sliced, so we’ll use it as is.
Step 5
Heat a non-stick frying pan over medium heat without adding any oil. Add the smoked duck and the halved garlic cloves. Stir-fry until the garlic is golden brown and the duck has rendered some of its fat. This process helps to remove any gamey smell from the duck and enhances its flavor.

Now, add the squeezed aged kimchi to the pan and stir-fry for about 1 minute. The kimchi will begin to soften and meld with the duck.

Add the large-cut onion and stir-fry until it becomes translucent. The onion’s sweetness will balance the overall flavor profile of the dish.
