Start by purchasing pre-cleaned bellflower root (doraji) from a market or grocery store. To reduce its inherent bitterness and remove any residual impurities, soak the doraji in 1 cup of cold water mixed with 1 tablespoon of salt for a short period. This step is crucial for mellowing the flavor.

While the doraji is soaking, gently rub it with your hands as if you were washing laundry. Rubbing along the natural fibers of the root helps to further diminish bitterness and also tenderizes the texture.

Next, rinse the doraji thoroughly under cold running water. Place the washed doraji in a colander and drain it well. Ensuring the water is thoroughly removed will prevent the root from clumping together when stir-fried.
