Easy and Delicious Zucchini and Pork Rice Bowl Recipe
Today, I made a delicious and easy Zucchini and Pork Rice Bowl that my child loves. This one-bowl meal is perfect for a quick and satisfying dinner.
Main Ingredients- 1/3 medium zucchini
- 1/3 medium onion
- A little bit of carrot
- 1/2 stalk green onion
Pork Marinade- 100g minced pork
- Pinch of black pepper
- 1 Tbsp mirin (cooking wine)
- 1 pinch of salt
Sauce and Other Ingredients- 1/2 cup water (approx. 90ml using a paper cup)
- 1 Tbsp oyster sauce
- 1/2 Tbsp soy sauce (or to taste)
- 1 Tbsp sesame oil
- Sesame seeds, as needed
- A little cooking oil

Cooking Instructions
Step 1
Prepare all the vegetables. Wash and julienne the zucchini, carrot, and onion into thin strips about 3-5cm long. Slice the green onion diagonally about 0.5cm thick to release its aroma when cooked.
Step 2
Let’s marinate the pork for a flavorful dish! In a bowl, combine the 100g of minced pork with a pinch of black pepper, 1 Tbsp of mirin, and 1 pinch of salt. Mix well by hand. Let it sit for a few minutes; this helps tenderize the meat and remove any unwanted odors.
Step 3
Make the cornstarch slurry to thicken the sauce. In a small bowl, mix 1/2 Tbsp of cornstarch with 1 Tbsp of water until smooth and no lumps remain. This will give the sauce a nice, glossy consistency.
Step 4
Time to start cooking! Heat a generous amount of cooking oil in a pan over medium-low heat. Add the diagonally sliced green onions and sauté until fragrant and slightly browned. Once the green onion aroma fills the kitchen, add the marinated minced pork. Break it apart with your cooking utensil and stir-fry until the pork is fully cooked through.
Step 5
Once the pork is cooked, add the julienned onion and carrot to the pan. Stir-fry until the onion becomes translucent and releases its sweetness. Then, add the zucchini and cook for just 1-2 minutes until it slightly softens. Be careful not to overcook the zucchini, as it can become mushy.
Step 6
Now, let’s add the delicious sauce ingredients. After the zucchini has slightly wilted, stir in 1 Tbsp of oyster sauce, 1/2 cup of water (approx. 90ml), and 1/2 Tbsp of soy sauce. Bring it to a simmer over high heat and let it bubble until the sauce thickens slightly and coats the vegetables. (*Important Tip: Taste the sauce before adding the cornstarch slurry. If it’s not salty enough, add a little more soy sauce to reach your desired flavor.)
Step 7
After adjusting the seasoning, reduce the heat to low. Gradually add the cornstarch slurry while stirring quickly to prevent lumps. Continue stirring until the sauce reaches your desired thickness. Once it’s just right, turn off the heat. Finish by drizzling in 1 Tbsp of sesame oil for extra aroma and sprinkling a generous amount of sesame seeds. Your delicious Zucchini and Pork Rice Bowl is ready!
