Introducing a nutritious Vegetable Jjajang Deopbap recipe, perfect for using up leftover vegetables in your fridge. With a store-bought 3-minute jjajang sauce, anyone can easily and quickly create a satisfying one-bowl meal. Enjoy a hearty meal with this simple yet delicious jjajang deopbap!
Main Ingredients- 1 packet Jjajang sauce (recommend store-bought 3-minute jjajang)
- 1 handful Oyster mushrooms (approx. 50g)
- 1 leaf Red cabbage (approx. 50g)
- 1/4 Carrot (approx. 30g)
- 1 Green chili pepper (adjust spiciness to taste)
- 1 Tbsp minced garlic
- 0.5 Tbsp oyster sauce
- 3 Tbsp cooking oil
- 1.5 bowls cooked rice
- A pinch of toasted sesame seeds
- A pinch of parsley flakes (optional)
- A small piece of the white part of green onion
Cooking Instructions
Step 1
First, wash all the vegetables thoroughly. Finely dice the carrot, red cabbage, and oyster mushrooms into small pieces (about 0.5 cm). Finely chop the white part of the green onion and the green chili pepper. Dicing the vegetables small helps them blend well with the jjajang sauce for a better flavor.
Step 2
Heat a deep pan or wok over high heat and add 3 tablespoons of cooking oil. Add the minced garlic and the chopped white part of the green onion. Stir-fry quickly for about 30 seconds until fragrant, creating an aromatic green onion oil. The green onion should be slightly golden.
Step 3
Once the green onion is fragrant, add the diced carrots, red cabbage, and oyster mushrooms. Keep the heat on high and stir-fry for about 1-2 minutes until the vegetables soften slightly and become slightly translucent. It’s good to retain a little crispness in the vegetables.
Step 4
Add 1.5 bowls of cooked rice to the pan. Add 0.5 tablespoon of oyster sauce – this adds umami and enhances the jjajang sauce’s flavor. Gently break up any clumps of rice with a spatula and stir-fry everything together with the vegetables.
Step 5
Now, add the chopped green chili pepper for a bit of spice and stir-fry. The chili pepper cuts through any richness and adds a refreshing taste. If you don’t like spicy food, you can omit it or adjust the amount.
Step 6
Continue to stir-fry for about 1 more minute, ensuring all ingredients are well combined. Make sure every grain of rice is coated with the delicious sauce. Be careful not to make the rice too mushy.
Step 7
Pour the warmed jjajang sauce generously over the stir-fried rice. Sprinkle with toasted sesame seeds and a pinch of parsley flakes, if desired, for a more visually appealing and flavorful Jjajang Deopbap. Mix well and enjoy!
