Simple Tomato Risotto: A Delicious Meal Made with Leftover Rice!
How to Make Delicious Tomato Risotto
Enjoy a wonderfully satisfying meal with this simple recipe using leftover rice! Not only do kids absolutely love it, but this tomato risotto also captivates the palates of adults! It’s a perfect dish for a quick yet impressive meal.
Ingredients- 5g Butter
- 3 cloves Garlic, thinly sliced or minced
- 1 bowl of Rice (leftover cooked rice works perfectly!)
- 2 strips Bacon, cut into bite-sized pieces
- Shredded Mozzarella Cheese, to taste (more is always better!)
- 300g Tomato Sauce (store-bought or homemade)
- Assorted vegetables of your choice (mushrooms, bell peppers, onions, broccoli, etc.), chopped
Cooking Instructions
Step 1
First, wash your chosen vegetables thoroughly and chop them into bite-sized pieces. For example, slice mushrooms, dice bell peppers, or chop onions. This step ensures everything is ready for cooking.
Step 2
Heat the pan over medium heat and add 5g of butter. Once melted, add the minced or sliced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it. This process infuses the dish with a lovely garlic aroma.
Step 3
Add the cut bacon to the pan and cook for about 2 minutes until it’s lightly browned and crispy, stirring occasionally with the garlic. The bacon will render some of its delicious fat, adding extra flavor.

Pour in the 300g of tomato sauce. Season with a pinch of salt and pepper to your preference. Bring it to a simmer and cook for about 2 minutes, allowing the sauce to heat through and the flavors to meld together.

Add the chopped vegetables to the pan. Continue to cook for another 2 minutes, stirring occasionally, until the vegetables are slightly tender but still have a little bite.
Step 6
Add the 1 bowl of cooked rice to the pan. Using a spatula, break up any clumps of rice and stir-fry for about 5 minutes. Ensure the rice is well coated with the tomato sauce and other ingredients, making it creamy and delicious.

Generously sprinkle your desired amount of shredded mozzarella cheese over the risotto in the pan. Don’t be shy with the cheese – it adds a wonderful richness!

Cover the pan with a lid and let it cook on low heat for about 5 minutes, or until the cheese is completely melted and gooey. This steaming process helps to fully melt the cheese and create a wonderfully creamy texture. Your delicious tomato risotto is now ready to serve!
