A quintessential Chinese home-style dish, the Tomato and Egg Stir-fry is a simple yet delicious meal or side dish. The soft, cooked eggs and the sweet and sour tomatoes combine to create a universally loved flavor, perfect for children and adults alike. It’s excellent as a side dish for rice or can be quickly prepared as a delightful brunch option. Enhance the umami flavor with oyster sauce or soy sauce for an even richer taste!

Step 1
First, prepare the eggs. Crack 2 fresh eggs into a clean bowl. Add a tiny pinch of salt. Use chopsticks or a whisk to gently beat the eggs until the yolks and whites are well combined. Don’t worry about over-mixing.

Next, prepare the tomatoes. Wash 2 ripe tomatoes thoroughly, remove the stems, and cut them into bite-sized pieces. Typically, cutting them into 2-3 cm chunks works well. Be careful not to cut them too small, as they might break apart too much during cooking.

Now, let’s start stir-frying! Heat 1 tablespoon of olive oil or cooking oil in a pan. Pour in the beaten eggs. As the eggs begin to cook, quickly scramble them with chopsticks until they form soft scrambled egg pieces. Remove the eggs from the heat when they are slightly undercooked to prevent them from becoming dry and tough.

Temporarily set the scrambled eggs aside on a separate plate. Add a little more oil to the same pan if needed, then add the chopped tomatoes and stir-fry them together for about 1-2 minutes, until they begin to soften and release their natural sweetness.

Once the tomatoes are somewhat cooked, return the scrambled eggs to the pan and mix them with the tomatoes, stir-frying briefly. Finally, sprinkle with a pinch of black pepper and season with 1/2 tablespoon of oyster sauce or 1/2 tablespoon of soy sauce to adjust the overall flavor. Oyster sauce will add a deeper umami taste.
