Key Ingredients- 2 ripe tomatoes
- 6 fresh eggs
- 1 stalk of green onion (white part only)
- 1 Tbsp coarse salt
- 1 Tbsp granulated sugar
- 1 Tbsp oyster sauce
- A little cooking oil (for stir-frying)
Cooking Instructions
Step 1
First, prepare the white part of the green onion and chop it coarsely. This will add a wonderful aroma to the dish.
Step 2
Remove the stem from the tomatoes and make a shallow cross-shaped cut on the top. Blanch the tomatoes in boiling water for about 30 seconds to 1 minute, or until the skin just begins to peel.
Step 3
Immediately transfer the blanched tomatoes to cold water to cool them down. This will make peeling the skin much easier.
Step 4
Once cooled, gently peel the skin off the tomatoes. Then, cut them into bite-sized pieces, about 2cm cubes or into quarters.
Step 5
Heat a little cooking oil in a wide pan over medium heat. Add the cut tomatoes and stir-fry for about 1 minute. Once the tomatoes release their juices, drain them using a sieve. (Removing excess moisture from the tomatoes ensures a neat and non-soggy stir-fry.)
Step 6
In a bowl, crack the 6 eggs. Add 1 Tbsp of coarse salt, 1 Tbsp of granulated sugar, the chopped green onion, and 1 Tbsp of oyster sauce. Whisk everything together thoroughly with a whisk until well combined, creating the egg mixture.
Step 7
In a clean pan, add enough cooking oil and preheat over medium heat. Pour in the egg mixture and stir gently with chopsticks or a spatula as it cooks. When the eggs are about 70% cooked, add the pre-stir-fried and drained tomatoes. Continue to stir-fry gently until everything is well combined. Be careful not to cook over high heat, as the eggs might burn.
Step 8
Once the eggs are fully cooked and nicely blended with the tomatoes, turn off the heat. Plate the delicious tomato and egg stir-fry attractively, and your wonderful dish is complete!
