Tofu Kimchi Ingredients- 1 block (300g) firm tofu
- 1 bowl (approx. 1 cup) well-fermented napa cabbage kimchi
- 1/4 onion
- 1 Korean chili pepper (optional, adjust for spiciness)
- A little green onion (scallion), about 1/4 stalk
Kimchi Stir-fry Seasoning- 2/3 Tbsp sugar (adjust based on kimchi’s sourness)
- 1 Tbsp sesame oil
- A pinch of sesame seeds
- 1/2 cup water (approx. 100ml)
- A little cooking oil (for stir-frying)
- 2/3 Tbsp sugar (adjust based on kimchi’s sourness)
- 1 Tbsp sesame oil
- A pinch of sesame seeds
- 1/2 cup water (approx. 100ml)
- A little cooking oil (for stir-frying)
Cooking Instructions
Step 1
Gently poach the tofu: Place the entire block of tofu (300g) into a pot. Add enough water to cover the tofu and gently simmer over medium heat for about 5-7 minutes until it becomes soft. This helps firm up the tofu and removes any raw smell. Once poached, carefully remove the tofu and let it cool slightly. Then, slice it into thick pieces, about 1.5-2cm thick. Gently pat the sliced tofu with a paper towel to remove excess moisture for a cleaner presentation.
Step 2
Prepare the vegetables: Thinly slice the 1/4 onion. Finely chop the Korean chili pepper (remove seeds if you prefer less spice or omit it). Slice the green onion diagonally, focusing on the white parts.
Step 3
Make the spicy and sweet kimchi stir-fry: Heat a little cooking oil in a pan over medium heat. Add the chopped kimchi (about 1 cup) and stir-fry until it becomes slightly translucent. Add 2/3 Tbsp of sugar and continue to stir-fry until the sugar dissolves. Pour in 1/2 cup (100ml) of water and let it simmer with the kimchi, allowing the flavors to meld. Cook until most of the liquid has reduced and the kimchi is well-coated.
Step 4
Finishing touches: When the kimchi mixture is nearly reduced, add the sliced green onion and chopped Korean chili pepper. Stir-fry for another minute to release their aromas. Turn off the heat and drizzle in 1 Tbsp of sesame oil, mixing everything well. Arrange the warm, sliced tofu attractively on a plate. Spoon the delicious kimchi stir-fry over the tofu. Finish with a sprinkle of sesame seeds for an extra nutty flavor. Enjoy your simple yet flavorful Tofu Kimchi!
