First, boil the eggs. Place the eggs in a pot, cover with water, and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10 minutes for hard-boiled eggs. Rinse the boiled eggs under cold water to make them easier to peel.

Let’s make the delicious braising sauce! In a wide pot or pan, combine the soy sauce, water, sugar, and plum extract. Bring to a rolling boil over high heat. Stir to ensure the ingredients are well mixed.

Prepare the chicken breast. If you have pre-cooked chicken breast, shred it into bite-sized pieces along the grain. For added flavor and a subtle sweetness, you can boil the chicken breast with ginseng or Codonopsis pilosula root, but if not available, simply boil it in plain water. Drain the cooked chicken breast.

Once the braising sauce is boiling, carefully add the boiled eggs. Gently stir or spoon the eggs occasionally for about 10 minutes to ensure the soy sauce color is evenly absorbed. Be careful not to stir too vigorously to prevent the eggs from breaking.

When the eggs have absorbed some color, add the shredded chicken breast and continue to braise over medium heat for about 5 minutes. Ensure the chicken breast also absorbs the flavors of the sauce.

Now, let the sauce reduce until it’s about one-third of its original volume and becomes slightly thickened. Turn off the heat. Be mindful not to over-reduce, as it might become too salty. Adjust the heat to achieve your desired consistency.

Transfer the finished soy-braised eggs and chicken breast to a serving dish. Sprinkle with sesame seeds for a garnish.
