- Pinch of black pepper
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/3 cup soy sauce
- 1 cup water
- 1 Tbsp minced garlic
- 1 Tbsp chopped green onion
- 1 Tbsp sugar
- 1 Tbsp corn syrup or rice syrup
- 1 Tbsp honey
- Pinch of black pepper
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, let’s make the delicious braising sauce that will define the flavor of your pork ribs! In a bowl, combine 1/3 cup soy sauce, 1 cup water, 1 Tbsp minced garlic, 1 Tbsp chopped green onion, 1 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp honey, a pinch of black pepper, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix them all together thoroughly. (Tip: Adjust the amount of soy sauce to your preference. It’s best to start with 1/3 cup and add more after tasting during cooking. Using half a paper cup of soy sauce is also a good option.)
Step 2
Rinse the pork ribs thoroughly under running water to remove any blood. Place the prepared pork ribs, half an onion cut into large pieces, and the pre-made braising sauce into a pot. Add 2 Tbsp of mirin (or cooking wine) to help tenderize the meat and remove any gamey odor.
Step 3
Now, place the pot over medium heat and bring it to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer gently. (Tip: For a richer flavor, I increased the soy sauce to half a paper cup and added half a cup of water. If you like a bit of spiciness, you can add chili peppers at this stage. I didn’t have fresh chili peppers, so I used 7 dried Vietnamese chili peppers, and it wasn’t very spicy. If you want a mild kick, try adding 3-4 fresh green chili peppers.)
Step 4
Once the meat is cooked and tender, cut the ribs into bite-sized pieces. Continue to simmer them after cutting so the sauce can further penetrate the meat, making it even more delicious. Taste periodically and adjust the seasoning: add 1-2 Tbsp of soy sauce if it’s not salty enough, or add about half a cup of water if it’s too salty. (Tip: It’s good to have some sauce remaining at the end. If you prefer more sauce to mix with rice or serve alongside, add more water. If you opted for half a paper cup of soy sauce from the beginning, it’s advisable to start with a more generous amount of water.)
Step 5
Once the sauce has thickened and coated the ribs nicely, turn off the heat. Transfer the finished braised pork ribs to a serving dish and sprinkle with toasted sesame seeds for a beautiful presentation. Enjoy this delicious braised pork ribs with a side of warm rice!
