How to Make Versatile Stir-Fried Beef for Tteokguk, Bibimbap, and More
It’s the season for comforting Tteokguk, and thanks to ‘Youn’s Kitchen,’ many people are enjoying Bibimbap. While ‘Youn’s Kitchen’ features bulgogi, we’ve prepared a simple stir-fried beef recipe perfect for topping Tteokguk or Bibimbap at home. This recipe focuses on light seasoning to complement various dishes.
Ingredients- Beef (ground or thinly sliced for stir-fry) 150g
- Minced garlic 1/3 Tbsp
- Mirin (cooking wine) 1 Tbsp
- Tsuyu (soy sauce for dipping) 1 Tbsp (or Soy Sauce 1/2 Tbsp)
- Black pepper, a pinch
Cooking Instructions
Step 1
First, prepare 150g of beef. If you have a larger cut, slice it into bite-sized pieces. If the beef seems bloody, soak it in cold water for about 30 minutes to remove excess blood. Removing the blood will eliminate any gamey odor and result in a cleaner-tasting stir-fry.
Step 2
Heat a pan over high heat without adding any oil. Add the drained beef and begin to stir-fry. Cook quickly over high heat to sear the outside of the meat. This step helps to lock in the juices, ensuring a tender texture.
Step 3
When the beef is about halfway cooked, add 1/3 Tbsp of minced garlic. The garlic will infuse the beef with its aromatic flavor.
Step 4
Next, add 1 Tbsp of mirin. Mirin is excellent for tenderizing the meat and removing any unwanted odors.
Step 5
Finally, add 1 Tbsp of tsuyu. If you don’t have tsuyu, you can substitute it with 1/2 Tbsp of regular soy sauce. Since this beef is intended as a topping, aim for a light seasoning rather than a strong flavor. A subtle seasoning will allow the beef’s natural taste to shine. Be careful not to over-salt.
Step 6
After adding all the seasonings, stir-fry quickly over high heat to finish. Once the seasonings are added, moisture will begin to release. Stir-frying quickly over high heat prevents the beef from becoming tough and keeps it moist. Cook until the beef is fully done and the sauce coats it evenly. This finished stir-fried beef is perfect as a topping for Tteokguk or Bibimbap, or simply as a flavorful side dish with rice.
