Main Ingredients- 2kg fresh red scallops
- 1L clean water
- 1/2 bottle soju (approx. 180ml)
Cooking Instructions
Step 1
First, use a brush to scrub the shells of the red scallops thoroughly to clean them. If there’s any dirt or debris, rinse them under running water. (Note: Red scallops don’t require purging and can be cooked immediately for a delicious result.)
Step 2
Arrange the cleaned red scallops, still slightly moist, nicely in a steamer basket. Spreading them out without overlapping will ensure they cook evenly.
Step 3
Pour half a bottle of soju evenly over the red scallops in the steamer. The soju helps to remove any fishy odors and makes the scallops more tender. Cover with a lid and steam over high heat for about 10 to 15 minutes. Adjust the cooking time based on the size of the scallops.
Step 4
Once the scallops begin to open their shells, they are fully cooked. Carefully transfer the steamer to the table and enjoy them one by one while they are hot! You’ll experience their firm, chewy texture and deep ocean flavor to the fullest. For an extra touch, you can serve them with a side of ‘chojang’ (spicy vinegar dipping sauce) or soy sauce with wasabi.
