Main Ingredients- 2 large eggs
- A little bit of chopped green onion
- A little bit of chopped carrot
- A little bit of chopped onion
- 2 imitation crab sticks (kani)
Seasoning & Others- 1 tsp oyster sauce
- 2 pinches of salt
- A pinch of black pepper
- 1 Tbsp cooking sake (mirin)
- 1 cup water (approx. 200ml)
- 1 tsp oyster sauce
- 2 pinches of salt
- A pinch of black pepper
- 1 Tbsp cooking sake (mirin)
- 1 cup water (approx. 200ml)
Cooking Instructions
Step 1
First, crack 2 fresh eggs into a mixing bowl with some depth. Adding 2 pinches of salt while whisking the eggs helps to eliminate any eggy smell and season the dish.
Step 2
Finely chop the prepared onion, green onion, and carrot. Also, shred or finely chop the 2 imitation crab sticks and add them to the bowl with the eggs. Finely chopping the vegetables ensures they blend well with the egg mixture and result in a smoother texture.
Step 3
Now it’s time to add the seasonings. Add 1 tsp of oyster sauce, a pinch of black pepper, and 1 Tbsp of cooking sake (mirin). Use a whisk or chopsticks to mix thoroughly until the eggs are smoothly beaten without any lumps. The sake helps to remove any unwanted odors from the eggs.
Step 4
Add 1 scoop of warm cooked rice to the egg mixture. Gently fold the rice into the egg mixture with a spatula, being careful not to mash the rice grains, so that the rice grains remain distinct.
Step 5
Finally, pour in 1 cup of water (approx. 200ml) and stir gently again to combine all ingredients well. The amount of water can be adjusted to your preference; it’s best not to make the mixture too thick.
Step 6
Pour the egg and rice mixture into a microwave-safe dish or container. Cover it with plastic wrap or a microwave-safe lid to prevent overflow. When covering with plastic wrap, don’t seal it completely; leave it slightly loose or poke a few holes with a chopstick to allow steam to escape. (Using a disposable plastic bag is also an option, but ensure it’s microwave-safe before use.)
Step 7
Microwave on high for 3 minutes. After 3 minutes, carefully remove the dish, gently stir the mixture with a spoon, and then microwave for another 2 minutes, or until the steamed egg rice is cooked through and fluffy. Cooking times may vary depending on your microwave’s wattage, so check for doneness and adjust as needed. Be very careful when removing the dish as it will be hot!
