  • 1 onion
  • 3 eggs
  • 1 pinch salt
  • 2 Tbsp soy sauce
  • 2 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp mirin (cooking sake)
  • 1 Tbsp oyster sauce
  • A dash of black pepper

First, prepare the Spam. You can use leftover Spam pieces from stews or a whole can. Using leftover Spam makes the dish even more economical.

Cut the Spam into bite-sized pieces as you like. Slicing it about 1cm thick provides a nice texture when cooked.

Peel and wash the onion thoroughly, then slice it thinly into strips. Slicing it this way helps it cook down softly and add flavor when sautéed with the sauce.

Now, let’s make the star of the Spam & Mayo Rice Bowl: the sauce! In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp mirin, 2 Tbsp oligosaccharide, 1 Tbsp oyster sauce, and a dash of black pepper. Mix well. This creates a perfect balance of sweet and savory.
