This is my go-to recipe for soy sauce noodles when I’m craving a simple yet satisfying noodle dish. It’s perfect for a quick and easy meal!
Main Ingredients- Somen noodles, 1 serving (approx. 100g)
Sauce- Soy sauce, 2 Tbsp
- Sugar, 1.5 Tbsp
- Sesame oil, 0.5 Tbsp (1 tsp)
- Sesame seeds, 1 pinch
- Soy sauce, 2 Tbsp
- Sugar, 1.5 Tbsp
- Sesame oil, 0.5 Tbsp (1 tsp)

Cooking Instructions
Step 1
Bring a generous amount of water to a rolling boil in a pot. Once boiling, add the somen noodles for one serving and cook for about 5 minutes. Gently stir the noodles occasionally to prevent them from sticking together.
Step 2
Once the noodles are cooked, drain them in a colander. Rinse them thoroughly under cold running water to remove excess starch and to make the noodles springy and firm. Rinsing with cold water prevents the noodles from becoming mushy and enhances their chewy texture.
Step 3
Place the drained somen noodles into a mixing bowl. Add 2 Tbsp of soy sauce, 1.5 Tbsp of sugar, 0.5 Tbsp of sesame oil, and a pinch of sesame seeds, in that order. Gently toss and mix the noodles with your hands to ensure the sauce is evenly distributed. Be careful not to mix too vigorously, as this can break the noodles.
Step 4
Once the soy sauce and all the seasonings are well combined with the noodles, your delicious soy sauce noodles are ready! You can enjoy them warm or chilled. For an extra flavor boost, consider adding crumbled seaweed or thinly sliced cucumber.
