Quick and Delicious Kimchi Stir-fry Using Store-Bought Smoked Pork Belly

Main Ingredients- Smoked pork belly 150g
- Well-fermented kimchi 1 cup (approx. 200g)
- Tofu 1 block (firm or regular)

Cooking Instructions
Step 1
Prepare the smoked pork belly. Since store-bought smoked pork belly is usually pre-cooked, you can use it as is, or give it a quick stir-fry in a pan to enhance its flavor. If you prefer it warmer and more tender, heat a pan over medium-low heat without oil and cook the smoked pork belly for about 2-3 minutes, flipping it occasionally.
Step 2
Cut the smoked pork belly into bite-sized pieces. Smoked pork belly has a strong salty flavor and aroma, so cutting it into manageable pieces will make it easier to enjoy with the kimchi. Aim for pieces about 2-3 cm in length.
Step 3
Stir-fry the kimchi. Use the same pan you used for the pork belly, or a clean one. Add the sliced smoked pork belly and cook over medium heat. The pork belly will render enough fat, so there’s no need to add extra oil. Once some fat has rendered, add the kimchi and stir-fry for about 3-5 minutes until the kimchi softens and releases a reddish oil. If the kimchi starts to look like it’s burning, reduce the heat slightly or add a tiny splash of water. You’re looking for a pleasant smoky aroma.
Step 4
Add the tofu to complete the dish. Arrange the prepared tofu over the stir-fried kimchi and pork belly. You can cut the tofu into cubes or larger pieces. Since the smoked pork belly is already quite salty, additional seasoning is usually not necessary. However, you can adjust the taste with a tiny pinch of sugar or a dash of soy sauce if desired.
