Jeon, or Korean pan-fried pancakes, are a staple during holidays and special occasions! Whether it’s with chives, mushrooms, oysters, cod, or meat patties, Jeon is always delicious depending on the ingredients. Today, I’m sharing a super simple Skewer Jeon recipe using just ham, imitation crab sticks, and scallions, as my husband requested it. This ingenious method doesn’t even require skewers or flour, so be sure to try it when preparing your holiday dishes!

Ingredients

  • 9 slices of Spam or similar ham
  • 9 imitation crab sticks
  • A handful of scallions
  • 9 eggs
  • Cooking oil, as needed

Rinse the scallions thoroughly under running water. Trim any excessively thick root ends; these can be saved for other pancake recipes.

Cut the scallions to match the length of the imitation crab sticks. Ensuring all three main ingredients (ham, imitation crab, scallions) are of similar length will make assembly much easier.

A square pan is ideal, but a round one will work fine. Heat the pan over medium-low heat and add a little oil. Pour in a thin layer of beaten egg. Once the egg begins to set slightly, arrange the ingredients on top in the following order: imitation crab stick, scallion, ham, another scallion, and finally another imitation crab stick. If there are gaps between the ingredients, pour a little more egg mixture to fill them in.

Cook over low heat until the egg is set and the ingredients are well adhered. This gentle cooking prevents burning and ensures the pancake holds together. The key is to flip it only once to finish, as multiple flips can cause it to break apart.

When the edges of the pancake start to lift slightly, use a spatula to confidently and quickly flip it over. Cook for less than a minute on the second side, and your delicious Skewer Jeon is ready!
