  • 150g fresh seaweed (laver)
  • 150g radish

Seasoning Ingredients

  • 2 Tbsp 2x concentrated vinegar
  • 1 tsp salt
  • 2 Tbsp sugar
  • A pinch of sesame seeds

First, place the fresh seaweed in plenty of cold water. Gently swish it around to wash it 2-3 times, then firmly squeeze out as much water as possible with both hands. This step prevents excess water from making the salad soggy and ensures a clean taste.

Thinly julienne the radish (you can leave the peel on for extra nutrients!). Slicing it thinly, similar to noodle strands, helps the seasoning penetrate well and creates a pleasant texture. Place the julienned radish in a large bowl or spacious container.

To the julienned radish, add 2 Tbsp of 2x concentrated vinegar, 2 Tbsp of sugar, and 1 tsp of salt. Gently mix everything together. Let the radish marinate for about 10 minutes. This process will soften the radish and draw out its natural juices.

You’ll notice liquid accumulating from the radish. Do not discard this liquid! Especially during autumn, radishes are sweeter and more nutritious, and this radish juice will significantly enhance the flavor of your seaweed salad. Leave it in the bowl.

Now, add the squeezed seaweed (from step 1) on top of the marinated radish. If the seaweed strands are too long, cut them 1-2 times with scissors into bite-sized pieces. Then, gently mix the seaweed and radish together with your hands. Be careful not to knead too vigorously, as this can release an unpleasant raw flavor.

Loosen up any clumped seaweed and thoroughly combine it with the marinated radish. Taste the salad and adjust the sweetness or saltiness according to your personal preference, adding a little more sugar or salt if needed.
