Ingredients

  • 2 slices of bread
  • 1 head of scallions (use both white and green parts)
  • 1 piece of butter (about 10g)
  • 3 Tbsp mayonnaise
  • 1/2 Tbsp sugar
  • 1 Tbsp condensed milk
  • 2 pinches of salt
  • 60g mozzarella cheese (adjust to your preference)

First, prepare 1 head of scallions. Wash them thoroughly, then thinly slice both the white and green parts into about 0.5cm pieces. Slicing them to a moderate thickness will provide a better texture; avoid making them too thin.

Melt 1 piece of butter in a pan over medium heat. Once the butter is melted, add the sliced scallions and sauté for about 3-5 minutes until the scallions soften and turn lightly golden brown. You’ll notice a pleasant aroma of scallions developing.

In a mixing bowl, combine 3 Tbsp mayonnaise, 1/2 Tbsp sugar, 1 Tbsp condensed milk, and 2 pinches of salt. Mix well. Add the sautéed scallions and 60g of mozzarella cheese to the bowl and stir everything together to create the scallion topping mixture.

Prepare 2 slices of bread. On one side of each slice (the side where you’ll add the topping), gently press down with the back of a spoon or a fork to slightly flatten it, being careful not to tear the bread. This helps the topping adhere better and ensures even toasting.

Generously spread the prepared scallion topping mixture from step 2 onto each slice of bread, covering the surface evenly. Make sure to spread it all the way to the edges. If you have extra mozzarella cheese, you can sprinkle a little more on top.

Place the bread slices with the topping into a preheated oven at 190°C (375°F) and bake for about 10 minutes. Bake until the cheese on top is melted and golden brown, and the edges of the bread are crispy. Baking times may vary slightly depending on your oven, so adjust as needed. (This can also be made in an air fryer or on a stovetop pan.)
