Ingredients

  • 300g Onion (about 1.5 medium onions)
  • 100g Carrot (about 1/3 medium carrot)
  • 3 Green chilies
  • 1 Tbsp Minced garlic
  • 1 Tbsp Coconut oil
  • 1 tsp Toasted sesame seeds
  • 1/4 tsp Salt

Cooking Instructions

Step 1

First, peel and wash the onions, then slice them into thin strips about 0.5cm thick. Remove the stems from the green chilies and slice them into thin rounds (about 0.3cm thick). Peel and thinly julienne the carrot.

Heat a pan over medium-low heat and add 1 tablespoon of coconut oil. Add the minced garlic and sauté until fragrant, being careful not to burn it. This will infuse the oil with a lovely garlic aroma.

Once the fragrant garlic oil is ready, add the sliced onions and julienned carrots to the pan and sauté them together.

Cook over medium heat until the onions become translucent and the carrots are slightly tender. You’ll notice the natural sweetness of the onions starting to release and a pleasant cooking aroma filling the air.

When the onions and carrots are cooked to your liking, add the sliced green chilies and sauté for just about 1 more minute. Finally, season with 1/4 teaspoon of salt to taste.
