- 50g peeled and deveined shrimp (5-6 pieces)
- 2 fresh eggs

First, thoroughly wash the fresh bean sprouts under running water. Cut them into bite-sized pieces, about 3-4cm long. This will improve the texture when eaten with the rice.

Crack the 2 eggs into a bowl. Add a pinch of black pepper according to your preference. Gently whisk with a fork until the eggs are smoothly beaten. Beating the eggs well will ensure a tender texture when cooked.

Heat a lightly oiled pan over medium heat. Add the prepared shrimp. To remove any fishy smell and enhance flavor, add 1 tablespoon of Mirin and stir-fry until the shrimp turn pink and opaque.
