Super Easy Dongjuk Clam Soup Recipe! Its Refreshing Broth is Exquisite
This is the first time I’ve made Dongjuk clam soup this year. People said children eat it well, so I made it with anticipation and excitement, and the effect was truly amazing! I gave the children a little broth on the shell with the clam meat, blew on it for them, and let them eat the clam meat. They were completely hooked and ate it so well. Ah, this is the joy of cooking that makes my child eat well! Now, let’s make this easy-to-prepare Dongjuk clam soup!
Ingredients- 1 bag of Dongjuk clams (approx. 500g)
- 1 medium-sized leek
- 1 Tbsp minced garlic
- 1/4 onion
- Chili pepper (optional, use Cheongyang or red chili)
- A pinch of coarse salt (for purging clams)
Cooking Instructions
Step 1
I was hesitating in front of the counter, wondering whether to buy the Dongjuk clams or not. A staff member there told me, ‘Don’t hesitate, just make clam soup today!’ So, I immediately bought them. ㅎㅎㅎ
Step 2
Since the Dongjuk clams are not pre-purged, you absolutely must purge them at home. Add about half a tablespoon of coarse salt and let them purge for about 2 hours. Change the water about 3 times in between until it runs clear.
Step 3
Just before cooking, rinse the clams under running water about 3 times. Now, we’re almost ready to make delicious Dongjuk clam soup!
Step 4
Place the rinsed clams in a pot and add plenty of water. Dongjuk clam soup is known for its incredibly clean and refreshing broth. I must have had several bowls of broth throughout the evening. It was truly the best!
Step 5
While the clams are cooking, prepare the other ingredients. Slice the leek diagonally. Finely chop or thinly slice the 1/4 onion. Mince the garlic beforehand. If using chili peppers, remove the seeds and chop them finely.
Step 6
As the water starts to boil, you’ll see white foam begin to bubble up from the clams.
Step 7
As more time passes, you’ll notice more and more foam forming.
Step 8
To ensure a clear broth, scoop out all the white foam that rises to the surface with a spoon. This step makes the broth much cleaner.
Step 9
After skimming off the foam, you’ll see a milky, clear clam broth.
Step 10
Now, add the prepared leek and onion to the pot.
Step 11
Add half a tablespoon (or 1 Tbsp) of minced garlic and let it simmer for a bit longer. Cook until the ingredients meld together nicely.

I tasted it, and the broth seemed a little bland. I wondered if I’d added too much water, but that’s okay! We can adjust the seasoning with salt.
Step 13
Taste the broth and gradually add coarse salt until you reach your desired seasoning. I think I added about one tablespoon.
