First, peel the skin off the potatoes using a peeler or a paring knife. Be careful not to cut yourself while peeling.

Next, slice the potatoes. If you have a mandoline slicer, you can use that, but if not, use a knife to cut them into as thin strips as possible. Slicing them thinly helps them cook faster and absorb flavors better.

Slice the ham into thin strips, similar in thickness to the potatoes. This will create a more harmonious texture when stir-fried together.
