This is a very simple potato stir-fry you can make when you don’t have any side dishes ready. While you can make it with just potatoes and carrots, adding sausages or ham makes it a vegetable stir-fry that both kids and adults will love. It’s a quick and delicious dish that’s perfect for a weeknight meal or a lunchbox addition.
Main Ingredients- 2 medium potatoes
- 1/3 carrot
- 1/2 onion
- 2 sausages (optional, based on preference)

Step 1
Let’s start with preparing the ingredients for our delicious stir-fry! First, peel the potatoes and carrots, then wash them along with the onion. Pat them dry to remove excess moisture.
Step 2
Cut the prepared vegetables into bite-sized pieces. For the potatoes, dicing them into about 1cm cubes makes them easier to cook evenly and gives a pleasant texture. Slice the carrot and onion to a similar size. If using sausages, slice them into 1cm thick rounds.
Step 3
Heat a large pan or wok over medium-low heat. Add a generous amount of cooking oil and sauté the minced garlic (about a 1.5cm square piece) until fragrant. Be careful not to burn the garlic; cook it gently to release its aroma. This creates a flavorful garlic oil base.

Add the diced potatoes to the pan first. Since potatoes take longer to cook than other vegetables, starting with them ensures they become tender and well-cooked.

Stir-fry the potatoes over medium heat until they turn golden brown and slightly translucent around the edges. Cooking on medium heat prevents them from burning and ensures they cook through evenly.
Step 6
Once the potatoes are golden and starting to soften, add the sliced onions and carrots to the pan. Stir-fry them together with the potatoes. The moisture released from the vegetables will help soften the potatoes further. Season with about 1/3 teaspoon of salt at this stage, adjusting to your taste.

Finally, add the sliced sausages to the pan. Continue to stir-fry everything together for another 1-2 minutes, until the sausages are lightly browned and well combined with the vegetables.
Step 8
When all ingredients are cooked through and the aroma is enticing, turn off the heat. Garnish with a sprinkle of sesame seeds for an extra layer of flavor and visual appeal.
