The thin cuts cook quickly, and the beer and coffee beans effectively eliminate any gamey odors, resulting in a clean and delightful flavor. You’ll want to make this often, perhaps even slicing the meat thinly on purpose next time!

Main Ingredients

  • Pork neck 500g
  • Beer 500ml
  • Salted shrimp paste (to taste)
  • Ssamjang (dipping sauce, to taste)

Aromatics & Seasoning

  • Doenjang (soybean paste) 1 Tbsp
  • Ginger 5 slices
  • Whole peppercorns 1 tsp
  • Instant coffee powder 1 Tbsp

Cooking Instructions

Rinse the thinly sliced pork neck under cold water to remove any blood. If you have beer that’s slightly past its expiration date, this is a great opportunity to use it for boiling the meat. We’ll also be using coffee beans for an extra layer of flavor and odor control.

Pour the 500ml of beer into a pot. Dissolve 1 Tbsp of doenjang in the beer. Add the rinsed pork neck slices and 5 slices of ginger. Ensure the meat is submerged.

Place the instant coffee powder (1 Tbsp) and whole peppercorns (1 tsp) into a spice bag or a fine-mesh strainer. Add this to the pot with the meat. (Don’t worry if a few coffee grounds escape! It won’t affect the outcome.) Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for about 20-25 minutes, or until the meat is tender. To check for doneness, insert a skewer or fork into the thickest part; if no pink liquid comes out, it’s ready.

Slice the cooked suyuk into bite-sized pieces. It’s best enjoyed immediately while warm. Serve with salted shrimp paste or ssamjang, and enjoy it wrapped in fresh lettuce or other leafy greens for a complete and delicious meal.
