Main Ingredients
- 1/2 Onion (approx. 100g)
- 2 Eggs
- 1 bowl Warm Rice
Cooking Instructions
Step 1
Peel the onion and slice it thinly into strands about 0.5cm thick. If you have a carrot, finely mince it to add color and texture (optional).
Step 2
Crack 2 eggs into a bowl, remove the chalazae (white stringy bits), and gently whisk them with a fork or chopsticks. Measure out 1/3 cup (approx. 60ml) of water to be used with the rice.
Step 3
Heat 1/2 Tbsp of grapeseed oil in a pan over medium-low heat. Add the chopped scallions and sauté for about 1 minute until fragrant, creating a scallion-infused oil for deeper flavor.
Step 4
Add the sliced onions to the pan and stir-fry quickly over high heat. Once the onions begin to turn translucent, add 1 Tbsp of soy sauce and continue to sauté for another 1-2 minutes until the onions are lightly browned and caramelized.
Step 5
Once the onions are well-cooked, pour in the measured 1/3 cup of water and add 1.5 Tbsp of oyster sauce. Stir well to combine the sauce. Bring to a simmer, then reduce heat to medium and cook for about 1 minute until the sauce thickens slightly.
Step 6
As the sauce begins to reduce, slowly pour the whisked eggs around the edges of the pan. Once the eggs start to set, gently stir with chopsticks to create soft scrambled eggs. Be careful not to overcook, as this can make the eggs dry.
Step 7
When the eggs are about 80% cooked and still soft, sprinkle with 1/2 tsp of black pepper and gently mix. Turn off the heat; the residual heat will finish cooking the eggs to a moist consistency.
Step 8
Serve the warm rice in a bowl. Generously top with the cooked onion and egg mixture. Finish with a drizzle of 1/2 Tbsp perilla oil and a sprinkle of 1 tsp sesame seeds. For an extra umami kick, you can add a handful of bonito flakes (optional). Enjoy!
