Ingredients

  • 100g Soba noodles
  • 1/3 cup Dashi soy sauce (Tsuyu)
  • 1 cup Water
  • 1 pack Natto (approx. 40-50g)
  • Small amount of Wasabi (to taste)

Cooking Instructions

Step 1

Let’s start by making the Tsuyu dipping sauce, the heart of this Natto Soba. Combine dashi soy sauce (Tsuyu) and water in a 1:3 ratio. For example, if you’re using 1/3 cup of Tsuyu, add 1 cup of water. Feel free to adjust the amount of Tsuyu to your preference. This sauce will add a delicious umami flavor to the noodles.

Step 2

Next, it’s time to cook the soba noodles. Add 100g of soba noodles to a generous amount of boiling water and cook according to the package instructions. It’s a good idea to stir occasionally to prevent the noodles from sticking together. Cooking them just right will ensure a delightful chewy texture.

Step 2

Step 3

Once the soba noodles are cooked, quickly rinse them under cold running water to cool them down. Rinsing in cold water makes the noodles firm and removes excess starch, enhancing their taste. Drain the noodles thoroughly in a colander. Excess water can dilute the sauce, so you can also gently shake the bowl or lightly squeeze the noodles with your hands to remove as much water as possible. Once drained, place the noodles in a bowl, pour the prepared Tsuyu sauce over them, and toss gently to coat evenly.

Step 3

Step 4

Now, let’s prepare the natto, which adds a unique flavor to this dish. Open the natto pack and mix in the included sauce and mustard. Then, vigorously stir the natto with chopsticks for about 50 times or more. The key to unlocking natto’s flavor is to whisk it until it becomes sticky and develops a frothy texture. Spoon the well-whisked natto over the soba noodles coated with the Tsuyu sauce.

Step 4

Step 5

Finally, add a small amount of wasabi according to your preference. The sharp, pungent kick of wasabi harmonizes beautifully with the distinct flavor of natto, creating a more complex taste. Adjust the amount to your liking for a delicious Natto Soba! Enjoy a satisfying and flavorful meal with minimal cooking effort.
