Dough

  • Room temperature eggs: 70g (about 1.5 eggs)
  • Cake flour: 150g
  • Sugar: 30g
  • Room temperature unsalted butter: 90g
  • Baking powder: 6g
  • Salt: 2g
  • Milk: 60g

Additional Topping Ingredients

  • Zucchini: 1/2, diced small
  • Sliced cheddar cheese: 3 slices, cut into 1/4 pieces
  • Spam luncheon meat: adequate amount, diced small
  • Onion: 1/4, finely chopped
  • Chopped parsley for topping: a little
  • Potato: 1, peeled and diced into 1cm cubes
  • Garlic slices: 3 cloves, thinly sliced
  • Mozzarella cheese: adequate amount

1. First, prepare the additional ingredients for the egg bread. Dice the zucchini, Spam, and potato into approximately 1cm cubes. Finely chop the onion. Thinly slice the garlic cloves.

2. Heat 1-2 tablespoons of cooking oil in a medium-sized pan over medium heat. Add the diced potato, zucchini, and thinly sliced garlic. Sauté for about 5 minutes until the potato is slightly tender. Be careful not to burn the ingredients while sautéing.

3. In a bowl, cream the room temperature unsalted butter until smooth using a hand mixer or whisk. Add sugar and salt, and whip until well combined with the butter. Gradually add the room temperature beaten eggs in 2-3 additions, mixing well to prevent separation.

4. Add the sifted cake flour and baking powder to the bowl (3). Mix with a spatula until just combined, without overmixing. Once the dry ingredients are mostly incorporated, add the milk and mix until the batter is smooth. Finally, stir in the sautéed vegetables, diced Spam, and cheddar cheese cut into 1/4 pieces. (Do not add the mozzarella cheese yet, as it’s for the final topping.)

5. Fill your silicone or muffin molds with the batter, about 2/3 full. You can also arrange the prepared ingredients like diced zucchini, Spam, and cheese on top of the batter for an attractive topping. It’s important not to overfill the molds.

6. Bake in a preheated oven at 175°C (350°F) for 15 minutes. Adjust baking time and temperature according to your oven’s specifications. Once the bread is golden brown, remove it from the oven, let it cool slightly, then carefully unmold and enjoy!
