This is a simple steamed egg dish that can be easily made using a microwave. Adding Mentaiko (spicy cod roe) makes it savory and provides a delightful texture. Enjoy the salty kick and satisfying bite!
Main Ingredients- 5 large eggs

Cooking Instructions
Step 1
Begin by preparing 5 fresh, large eggs. These are the key to a silky smooth steamed egg!
Step 2
In a bowl, crack the 5 eggs. Add 1 tsp of salt and whisk thoroughly until the eggs are completely beaten and no streaks of white or yolk remain. The salt not only seasons but also helps to achieve a better texture.
Step 3
Pour in 1/4 cup of cold water to make the steamed egg extra tender. Whisk again to ensure the water and eggs are well combined. Be precise with the water measurement; too much can make the egg custard too loose.
Step 4
For a silky smooth texture, strain the egg mixture through a fine-mesh sieve. This step removes any bits of eggshell or unincorporated egg white, ensuring a perfectly smooth custard.

Prepare the Mentaiko (spicy cod roe), paprika, and carrot. Finely dice the paprika and carrot. The smaller the pieces, the better they will integrate into the steamed egg.

Prepare 1 Mentaiko. If raw Mentaiko is added directly, it might sink to the bottom during cooking, making that part too salty and leaving the top without any roe. To prevent this, lightly moisten the Mentaiko with a little water, then microwave it for about 2 minutes. This gently cooks the roe, allowing its flavor to be evenly distributed without it sinking.

Pour the strained egg mixture into a microwave-safe bowl or earthenware pot. Fill the container only about two-thirds full, as the egg will expand as it cooks.

Sprinkle the finely diced paprika and carrot evenly over the egg mixture. The colorful vegetables add a lovely visual appeal.

Cover the bowl loosely with plastic wrap, leaving a small gap for steam to escape. Microwave for 3 minutes.

After 3 minutes, carefully remove the bowl from the microwave. You’ll notice the egg mixture is about 50% cooked and has started to set.
