Main Ingredients

  • 6 dumplings (mandu)
  • A little scallion or green onion (finely chopped)
  • A little dried seaweed (gim), julienned
  • 2 eggs

Broth & Seasoning

  • 2 bowls of pre-made broth (approx. 800ml)
  • 2 Tbsp fish sauce (aekjeot) or soup soy sauce
  • A little sesame seeds
  • A little sesame oil
  • A little soup soy sauce or salt (to taste)

Cooking Instructions

Before you start cooking the mandu-guk, pour 2 bowls of broth (prepared the day before) into a pot and place it over medium heat. At the same time, finely chop the scallions and lightly beat the 2 eggs. Prepare the dumplings; they can be used directly from frozen or slightly thawed, depending on your preference.

Once the broth begins to boil, carefully add the prepared dumplings. As the dumplings float to the surface and start cooking, add 2 tablespoons of fish sauce for added umami. When the soup comes to a boil again, slowly pour the beaten eggs in a circular motion around the edge of the pot. Stir gently to create delicate egg ribbons rather than a solid omelet.

When the egg is cooked and appears as soft ribbons, add the chopped scallions and let it simmer for another moment. Allow the fragrant scallions to infuse the soup for about 1-2 minutes.

Ladle the well-cooked dumplings and hot broth into bowls. Garnish with julienned dried seaweed (gim), a drizzle of sesame oil, and a sprinkle of sesame seeds to complete this delicious mandu-guk. Adjust seasoning with soup soy sauce or salt if needed, according to your taste.
