Simple Korean Seaweed Soup with Potatoes (Gamja Miyeokguk)
Super Easy Morning Soup with Potato and Seaweed: Cooked Directly in Soaked Seaweed Water (Great as a Breakfast Meal Replacement!)
A refreshing and clean-tasting clear seaweed soup, made even more flavorful by cooking it directly in the water used to soak the seaweed. It’s a simple yet deeply satisfying soup.
Main Ingredients- 10g dried seaweed (about 1 handful)
- 5 cups water (1L)
- 3 medium potatoes
- 1/2 Tbsp minced garlic
- 1-2 Tbsp soup soy sauce (adjust to taste)
- A pinch of salt
Broth Ingredients (Optional)- 1-2 dried shiitake mushrooms
- 1 piece of dried kelp (5x5cm)

Cooking Instructions
Step 1
First, rinse the dried seaweed multiple times under cold water to remove any impurities. Then, soak it in fresh water for about 10-15 minutes until fully rehydrated. (TIP: After soaking, rinse the seaweed again and squeeze out excess water for a cleaner taste.)
Step 2
Pour 5 cups (1L) of water into a pot. Add the optional broth ingredients: dried kelp and dried shiitake mushrooms. (You can skip these if you don’t have shiitake mushrooms.) Bring to a boil over high heat.
Step 3
Once the water is boiling vigorously, remove and discard the kelp and shiitake mushrooms. (Boiling them for too long can impart a bitter flavor.) Peel the potatoes and cut them into bite-sized pieces, then add them to the pot. Squeeze out the excess water from the rehydrated seaweed and add it directly to the pot to cook along with the potatoes.
Step 4
Continue to boil the soup over medium heat until the potatoes are tender and easily pierced with a fork (this usually takes about 7-10 minutes). Once the potatoes are cooked, add 1/2 tablespoon of minced garlic.
Step 5
Begin seasoning the soup with 1-2 tablespoons of soup soy sauce. It’s best to taste as you go rather than adding too much at once. Adjust the final seasoning with a pinch of salt if needed. Once the taste is balanced, let it simmer for another moment before serving this refreshing and delicious potato seaweed soup!
