Miyeokguk Ingredients

  • Dried seaweed (miyeok) 10g
  • Perilla oil (deulgireum) 1 Tbsp
  • Soy sauce for soup (guk-ganjang) 2 Tbsp
  • Salt (to taste)
  • MSG/Flavor enhancer 1/2 Tbsp (optional)
  • Minced garlic 1/2 Tbsp

Cooking Instructions

First, place about 10g of dried seaweed in a bowl and soak it in cold water for about 10 minutes until it’s fully rehydrated and softened.

Once the seaweed is rehydrated, gently but thoroughly rub it with your hands under running water. Rinse it several times to remove any sand or impurities. Squeeze out excess water.

Heat 1 tablespoon of perilla oil in a pot over medium-low heat. Add the squeezed seaweed and stir-fry until fragrant, about 2-3 minutes. This step helps develop a deeper, nutty flavor in the soup.

Once the seaweed is well stir-fried, pour in plenty of water. For about 4-5 servings, approximately 600ml to 800ml of water is suitable. You can adjust the amount based on your preferred soup consistency.

Add 2 tablespoons of soy sauce for soup to start building the base flavor. Then, add 1/2 tablespoon of MSG or flavor enhancer for an extra savory boost (this is optional and can be omitted or substituted with anchovy broth or kelp broth if preferred).

Finally, add 1/2 tablespoon of minced garlic for added aroma and depth. Stir well to incorporate.
