Delicious Jjajang Fried Rice Made with Jjajang Powder
Discover an incredibly simple recipe for a delightful meal that uses jjajang powder directly in fried rice, eliminating the need to make a separate jjajang sauce. Enriched with plenty of vegetables, bursts of dried shrimp, and fluffy scrambled eggs, this dish is a hit with both kids and adults!
Main Ingredients- Jjajang powder 30g (store-bought)
- 1/4 head of cabbage (approx. 100g)
- 1/2 onion (approx. 100g)
- 1/3 carrot (approx. 50g)
- 1 stalk of green onion (mainly the white part)
- 1 egg
- 400g cooked rice (cold or warm, for 2 servings)
- 20g dried shrimp (optional)
- 1 Tbsp oyster sauce
- Olive oil or cooking oil, as needed
Cooking Instructions
Step 1
First, let’s prepare the vegetables for stir-frying. Finely chop 1/4 head of cabbage, 1/2 onion, and 1/3 carrot. If they are too large, they will take longer to cook, so chopping them into bite-sized pieces is recommended. Finely slice the white part of the green onion.
Step 2
Heat a generous amount of olive oil in a pan. Add the sliced white part of the green onion and stir-fry slowly over low heat. This process infuses the oil with the sweet aroma of the green onion, creating fragrant scallion oil. It’s important to cook it gently to prevent burning.
Step 3
Once the scallion oil is fragrant, add the chopped cabbage, onion, and carrot. Stir-fry over high heat to maintain the vegetables’ crisp texture. The key is to cook until the vegetables are slightly softened and the onions become translucent.
Step 4
When the vegetables are about halfway cooked and their sweet aroma starts to release, add 20g of dried shrimp and stir-fry together. The dried shrimp will significantly enhance the savory flavor. You can omit this ingredient if you don’t have it.
Step 5
Push the ingredients to one side of the pan, or use a separate pan. Crack 1 egg into the empty space and scramble it. Gently stir with chopsticks until cooked. This will be mixed with the rice later.
Step 6
Now it’s time to add the rice. Prepare about 400g of rice for 2 servings. Using cold rice will result in fluffier fried rice, but warm rice is also fine. Add the rice and break up any clumps with a spatula, mixing it well with the vegetables.
Step 7
Finally, it’s time to add the jjajang powder! Sprinkle 30g of jjajang powder over the rice. Then, stir-fry quickly over high heat, ensuring all ingredients are evenly combined. It’s crucial to stir-fry thoroughly to prevent the jjajang powder from clumping.
Step 8
When only jjajang powder is used, the seasoning might be a bit mild. Adding 1 tablespoon of oyster sauce at this point will greatly enhance the umami and flavor. You can also adjust the seasoning to your preference with soy sauce or salt. Stir-fry once more to let all the flavors meld together, and your delicious jjajang fried rice is complete!
