My child and I decided to try some home baking, looking for a fun activity. I decided to slightly adapt a scone recipe I’d saved using hotcake mix. Forget difficult baking – I’m here to share a super easy, fail-proof recipe. Let’s have a delightful baking time together!
Dry Ingredients (Excluding Flour)- 20g Cooking Oil (e.g., Sunflower Oil)

- 30g Coconut Flour (can be substituted with cake flour)
- 40g Chopped Nuts (optional, can be substituted with other favorite additions)

Cooking Instructions
Step 1
Today’s star ingredient for our scones is the hotcake mix! Hotcake mix already contains leavening agents like baking powder, making it a fantastic base for baking. You can easily substitute other ingredients with what you have at home, so don’t hesitate to try it. (Essential: Hotcake Mix, Egg, Cooking Oil / Substitutable: Almond Flour → Cake Flour, Coconut Flour → Cake Flour, Whipping Cream → Heavy Cream/Milk, Nuts → Omit/Other Toppings)
Step 2
First, let’s combine all the ingredients except for the dry flour components. Get a medium-sized bowl and crack one fresh egg into it. You can use the whole egg without separating the yolk and white.

Next, measure and add 20g of cooking oil. Neutral-flavored oils like sunflower or canola oil work well.

Then, add 25g of whipping cream. If you don’t have whipping cream, don’t worry – 25g of heavy cream or milk will work just fine as a substitute.

Using a mini whisk or a fork, gently mix these ingredients until they are well combined. It’s important to stir until there are no lumps and the mixture is smooth.

Now, let’s move on to the dry ingredients. In a separate bowl, measure and combine the flours. First, add our star ingredient, the hotcake mix – 150g. Thanks to the hotcake mix, your scones will turn out wonderfully soft and moist.

Following that, add 70g of almond flour for a delightful nutty flavor. If you don’t have almond flour, feel free to use cake flour as a substitute.
