  • 1 Tbsp soup soy sauce (guk-ganjang)
  • 1 Tbsp soy sauce (jin-ganjang)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp sugar
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare the toppings for your Janchi Guksu. Thinly slice the zucchini, onion, and carrot into matchsticks about 0.5cm thick. Slicing them this way ensures a pleasant texture and appealing presentation once cooked.

Step 2

Now, let’s make the broth. In a pot, combine 1.1L of water with 2 tablespoons of soy sauce (jin-ganjang) and 2 tablespoons of soup soy sauce (guk-ganjang). Bring this mixture to a boil over high heat. Once boiling, add all the pre-sliced zucchini, onion, and carrot. Let them cook until tender. While the vegetables are cooking, whisk the egg in a separate bowl. Once the vegetables are tender, slowly drizzle the beaten egg into the boiling broth in a swirling motion. Let the egg gently cook into ribbons, then reduce the heat slightly to allow the flavors to meld.

Step 3

It’s time to cook the somen noodles. In a large pot filled with plenty of water, bring it to a rolling boil. Add 2 servings of somen noodles. Once the water returns to a boil, pour in about half a cup of cold water. Repeat this process of adding cold water and bringing it back to a boil two more times. This technique helps the noodles become delightfully chewy and firm. After the final boil, drain the noodles and rinse them thoroughly under cold running water to remove excess starch and achieve a perfectly springy texture.

Step 4

Finally, assemble your Janchi Guksu! Place the chewy somen noodles into serving bowls. Ladle the hot, savory broth generously over the noodles, making sure to include the cooked vegetables and egg ribbons. For an extra flavor boost, prepare the seasoning sauce by mixing 1 tablespoon sesame oil, 1 tablespoon soup soy sauce, 1 tablespoon soy sauce, 1/2 tablespoon minced garlic, 1/2 tablespoon sugar, 1 tablespoon gochugaru, and 1 tablespoon sesame seeds.
