You can create a wonderful and delicious fried rice using just ham and eggs from your refrigerator. It’s a hearty meal that everyone from kids to adults will love. The recipe is incredibly simple, ensuring even beginner cooks can make it successfully. It’s the perfect dish for a quick and satisfying meal on busy mornings or evenings!
Basic Ingredients- 120g processed ham (diced)
- 2 fresh eggs
- 1/3 stalk green onion (chopped)
- 2 Tbsp cooking oil
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (for flavor)
- Pinch of dried parsley flakes (for garnish)
- Pinch of whole sesame seeds (for garnish)
Cooking Instructions
Step 1
First, dice the ham into approximately 1cm cubes, making it easy to eat. Chop the green onion finely, using both the white and green parts. Preparing the ingredients in advance will make the cooking process much smoother.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped green onion and stir-fry until fragrant, creating infused ‘green onion oil’. This step will bring out the subtle sweetness and aroma of the green onion, enhancing the overall flavor of the fried rice.
Step 3
Once the green onion is lightly golden and aromatic, add the diced ham to the pan and continue to stir-fry. Cooking the ham in its own rendered fat adds an extra layer of deliciousness.

When the ham is nicely cooked, crack the 2 eggs into a small bowl and whisk them lightly. Pour the beaten eggs into the pan with the ham and green onion. Using a spatula or chopsticks, stir gently to scramble the eggs, mixing them evenly with the other ingredients as they cook. The key is to cook the eggs until they are just set and incorporated into the mixture.

Once the ingredients are partially cooked, add 1 bowl of cooked rice (about 200g). Sprinkle in 1 tablespoon of toasted sesame seeds, 1 tablespoon of soy sauce, and 1 tablespoon of sesame oil for added flavor. Adding the soy sauce and sesame oil at this stage will bring out the savory notes of the fried rice.
Step 6
Now, stir-fry everything together over medium heat for about 2-3 minutes, ensuring all ingredients are evenly combined with the rice. Stirring thoroughly will prevent the rice from clumping and result in fluffy, separated grains of rice. This ensures each grain is coated with the delicious flavors.
