  • 3 heads of Bok Choy
  • 1 Tbsp salt (for blanching)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp perilla oil (deulgireum)
  • 1 Tbsp fish sauce (or soy sauce for soup)
  • 1.5 Tbsp toasted sesame seeds (or ground sesame seeds)

Cooking Instructions

First, let’s prepare the bok choy. Gently separate each leaf from the 3 heads of bok choy. Then, wash them thoroughly under running water, ensuring that any soil or debris between the leaves is completely removed.

Now, let’s blanch the bok choy to perfection! Fill a pot with plenty of water and add 1 tablespoon of salt. Once the water is boiling vigorously, add the prepared bok choy. Stir gently and blanch for about 1 minute. Be careful not to overcook, as it can become too soft.

After blanching, it’s important to cool the bok choy quickly to maintain its crisp texture. Immediately drain the blanched bok choy in a colander and rinse it under cold running water to stop the cooking process and cool it down. This step helps preserve its vibrant green color and refreshing crunch.

Finally, we’ll mix in the seasonings to complete this delicious Bok Choy Namul! Squeeze out any excess water from the cooled bok choy. In a bowl, combine 1/2 Tbsp minced garlic, 1 Tbsp fragrant perilla oil, 1 Tbsp fish sauce (or soy sauce for soup) for a savory depth, and 1.5 Tbsp toasted sesame seeds. Put on a pair of disposable gloves and gently toss everything together until well combined. Taste and adjust seasoning if needed, adding a tiny bit more fish sauce or salt if necessary.
