  • 1 pack Enoki mushrooms (approx. 100g)
  • 2 fresh eggs
  • 1/2 stalk green onion or scallion (approx. 20g)

Seasoning & Others

  • 1/3 tsp salt (approx. 2g)
  • Cooking oil (for pan-frying), generous amount

Cooking Instructions

First, wash the green onion (or scallion) thoroughly, pat it dry, and finely mince it. You can use both the white and green parts, or if cooking for children, use mainly the white part or mince it very finely to reduce the strong onion flavor.

Trim about 3cm from the base of the Enoki mushrooms. Rinse them lightly under running water and drain well. Be careful not to wash too vigorously, as the mushrooms can become mushy. Once rinsed, tear the Enoki mushrooms into bite-sized pieces (about 3-4 sections) by hand, or slice them about 1cm apart with a knife. This helps them mix well with the egg batter and cook evenly.

Crack 2 fresh eggs into a deep bowl. Add 1/3 teaspoon of salt. Using a chopstick or a whisk, beat the eggs until the yolks and whites are well combined and the mixture is smooth. You can adjust the saltiness to your preference, but 1/3 teaspoon is a good starting point.

Add the prepared Enoki mushrooms and minced green onion to the beaten egg mixture. Gently mix everything together with a spoon or spatula until the ingredients are evenly coated with the egg batter. Ensure the Enoki mushrooms are not clumped together and are well-covered.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is sufficiently hot, scoop portions of the batter with a spoon and place them onto the pan, forming small, round pancakes. It’s best to make them into bite-sized pieces for easy eating. Leave some space between each pancake to prevent them from sticking together and ensure even cooking.
