Quick & Easy Enoki Mushroom Rice Bowl Recipe

A simple yet incredibly delicious meal. This recipe is perfect for a quick and satisfying lunch or dinner.
Main Ingredients- 2 packs Enoki mushrooms (trim ends and separate into strands)
- 2 bowls cooked rice
Cooking Instructions
Step 1
In a small pot, add 4 tablespoons of Mirin. Heat over medium heat and bring to a simmer. Cook until the strong alcohol aroma dissipates, which indicates it’s ready for the next step.

Step 2
Once the alcohol smell has reduced, add 3 tablespoons of soy sauce and 1 tablespoon of sugar. Stir well until the sugar is completely dissolved. Continue to simmer over low heat to create a flavorful glaze base.

Step 3
Add the enoki mushrooms, cut into approximately 2cm segments, to the simmering glaze. Gently toss them to coat evenly with the sauce. Braise for about 2 minutes, just until the mushrooms are tender but still have a slight bite. Be careful not to overcook, as they can become too soft.

Step 4
Serve warm cooked rice in a bowl. Generously spoon the prepared enoki mushroom glaze over the rice. Place two egg yolks gently in the center for a rich, creamy topping.

Step 5
Finally, garnish with freshly chopped scallions. You can also add a sprinkle of sesame seeds if desired. Break the yolk and mix everything together for a delicious, savory, and slightly sweet rice bowl.
