Scrambled Eggs

  • 2 Tbsp Olive Oil
  • 3 Large Eggs
  • 2 Pinches Salt

Pasta Ingredients

  • 80g Spaghetti
  • 1/2 Tbsp Garlic Powder
  • 6 Tbsp Olive Oil
  • 100ml Pasta Water or Water
  • 2 Tbsp Grated Parmesan Cheese
  • 2 tsp Chicken Powder
  • Pinch of Black Pepper
  • 1/4 Onion

Garnish (Topping)

  • Pinch of Crushed Red Pepper
  • Pinch of Parsley Flakes

For Boiling Pasta

  • 1.5 Liters Water
  • 1 Tbsp Salt

Cooking Instructions

Step 1

First, prepare 1/4 onion to add depth of flavor to your pasta. Peel the onion and finely mince it with a knife. Mincing it finely will help distribute the onion’s sweetness throughout the pasta when sautéed.

Step 1

Step 2

Crack 3 fresh eggs into a wide bowl. Gently whisk the yolks and whites together with chopsticks or a fork. Add 2 pinches of salt and mix well; this will season the scrambled eggs. Whisk gently to avoid creating too much foam.

Step 2

Step 3

In a large pot, bring 1.5 liters of water to a boil over high heat with 1 tablespoon of coarse salt. Once the water is at a rolling boil, add 80g of spaghetti. Cook for about 7 minutes, or 1-2 minutes less than the package instructions, until al dente. Reserve the pasta water before draining, as it will be used later.

Step 3

Step 4

Drain the cooked pasta thoroughly using a colander. While it’s still hot, toss the pasta with 1-2 tablespoons of olive oil. This prevents the noodles from sticking together and gives the pasta a nice sheen.

Step 4

Step 5

Now, let’s make the scrambled eggs. Heat a medium-sized pan over medium-low heat and add 2 tablespoons of olive oil. Once the pan is adequately preheated, pour in the whisked egg mixture. Gently stir with chopsticks or a spatula to create soft scrambled eggs.

Step 5

Step 6

Cook the scrambled eggs until they are about 80% done, then turn off the heat. The residual heat will finish cooking them, resulting in moist and tender scrambled eggs. Be careful not to overcook them, as they can become dry.

Step 6

Step 7

Set the scrambled eggs aside briefly. In the same pan, add about 6-7 tablespoons of olive oil over medium-low heat. Add the minced onion and sauté slowly until it becomes translucent, drawing out its natural sweetness. Stir occasionally to prevent burning.

Step 7

Step 8

Once the onions are translucent, add 1/2 tablespoon of garlic powder and sauté together to release the garlic’s aroma. Garlic powder can burn easily, so sauté it briefly with the onions to infuse their flavor.

Step 8

Step 9

When the onions are fully translucent and fragrant, add the cooked spaghetti to the pan.

Step 9

Step 10

Now it’s time to add the flavor enhancers for the pasta. Sprinkle 2 teaspoons of chicken powder evenly over the noodles.

Step 10

Step 11

Add 2 tablespoons of grated Parmesan cheese for a rich, nutty flavor.

Step 11

Step 12

Pour in 100ml of the reserved pasta water or plain water. Using pasta water helps the sauce emulsify and coat the noodles beautifully, creating a smoother texture.

Step 12

Step 13

Combine all ingredients and sauté over medium heat for about 1 minute, ensuring the sauce coats the pasta well. Allow the pasta water to reduce slightly, thickening the sauce.

Step 13

Step 14

Once the sauce has reduced to your desired consistency, freshly grind some black pepper over the pasta. The slight spice of the pepper helps to cut through any richness.

Step 14

Step 15

Gently add the prepared soft scrambled eggs back into the pan.

Step 15

Step 16

Carefully toss everything together to combine, being gentle so as not to break up the scrambled eggs. Turn off the heat just before fully mixing. (Adding the scrambled eggs at the very end and mixing quickly preserves their soft texture.)

Step 16

Step 17

Transfer the finished savory egg oil pasta to a serving plate. Garnish with freshly ground black pepper, extra Parmesan cheese, crushed red pepper, and parsley flakes for a beautiful presentation and enhanced flavor. Enjoy your delicious meal!
